How kombucha fermentation works

Kombucha is made by fermenting sweetened tea with a SCOBY and starter liquid. Yeasts transform sugars into fermentation products, while bacteria further transform the brew and produce organic acids. The microbial community and chemistry vary with the culture, tea, sugar, temperature, oxygen exposure and fermentation time.

Basic home-brewing workflow

  1. Prepare sweetened tea and allow it to cool.
  2. Add the SCOBY and an appropriate amount of mature starter liquid.
  3. Cover the vessel so air can circulate while keeping insects and debris out.
  4. Ferment at a stable room temperature and taste periodically as acidity develops.
  5. When the flavour is right for you, reserve mature starter liquid for the next batch and bottle or refrigerate the finished kombucha according to your recipe.

What normal fermentation can look like

A new cellulose layer may form at the surface and the flavour should gradually become more acidic. Sediment, yeast strands and changes in the pellicle can be normal. Appearance alone is not enough to diagnose every contamination issue, so assess surface growth, smell, brewing conditions and your process together.

Troubleshooting kombucha

No fizz

Carbonation depends on residual fermentable sugar, temperature, bottle closure and time. A flat batch does not automatically mean the SCOBY is inactive.

Too sweet

If the brew otherwise looks and smells normal, allow more fermentation time and keep temperature reasonably stable. Inoculation level and tea composition can also change fermentation speed.

Too sour

The fermentation has progressed beyond your preferred flavour profile. Shorten the next primary fermentation and taste earlier. Very acidic kombucha can also be retained as starter liquid for a subsequent batch.

Unusual smell or surface growth

Do not taste a batch with suspected mould or clearly abnormal growth. Discard questionable material and review vessel hygiene, tea preparation, starter quantity and fermentation conditions before starting again.

Temperature and Indian climate

Fermentation speed is strongly temperature-dependent. Warm conditions can accelerate acidification and flavour development, while cooler conditions slow fermentation. Use a consistent room temperature and judge the brew by its process and sensory changes rather than a single fixed day count.

Safety and evidence

Kombucha is a fermented food, not a medicine. Any probiotic or health effect depends on the finished product, microbial composition, serving conditions and evidence base; it should not be inferred simply from the presence of a SCOBY.
