Ingredients:

For the Tempeh Mix:

  2. 🌶️ 2 tsp Paprika
  3. 🍅 1 cup Tomato Puree
  4. 🧅 1 large Onion
  5. 🍄 1¼ cup finely chopped Mushrooms
  6. 🌱 1 tsp Fennel Seeds
  7. 🥄 1½ tbsp Soy Sauce
  8. 🧂 Salt to taste
  9. 🥥 2 tsp Coconut Sugar

For the Lasagna Assembly:

  1. 🍝 Lasagna Sheets
  2. 🧅 Thinly sliced Onions
  3. 🧀 Cheese
  4. 🌱 Dried Oregano
  5. 🌿 Dried Basil
  6. 🌱 Parsley for garnish

Method:

  1. 🥣 Blend the tempeh to a coarse consistency. In a pan, add oil and sauté ginger-garlic paste, onions, and finely chopped mushrooms.
  2. 🥘 Add the crushed tempeh, soy sauce, fennel seeds to the pan. Add tomato puree, paprika, chili flakes, Italian spice mix, nutmeg powder, coconut sugar, and salt. Mix well.
  3. 🥣 For lasagna assembly, start with placing 2 lasagna sheets as the base. Add a layer of vegan white sauce, followed by a layer of the tempeh mix. Add a layer of thinly sliced onions, sprinkle dried oregano and basil, and add a layer of cheese. Repeat the layers.
  4. 🧀 Top the lasagna with cheese and bake at 190°C until the top turns slightly golden. Garnish with parsley and enjoy!
