Brewing kombucha at home does not require a complicated setup. A suitable vessel, clean equipment, breathable cover, tea, sugar, a live SCOBY and a way to monitor the fermentation are the core pieces. This guide explains what each item does and what is optional.

What you actually need

  • Brewing vessel: a clean, food-safe glass jar or other suitable fermentation vessel with enough capacity for the batch and enough surface area for primary fermentation.
  • Live kombucha culture: a SCOBY and appropriate starter liquid provide the microbial culture and acidic starting environment for the brew.
  • Tea: black or green tea is a practical starting point because the culture is adapted to a tea-and-sugar fermentation.
  • Sugar: ordinary granulated sugar is the predictable starting substrate for home brewing.
  • Breathable cover: use a clean cloth or suitable filter secured over the vessel during primary fermentation. The cover should allow airflow while limiting access by insects and debris.
  • Rubber band or similar fastener: keeps the cover securely in place.

Useful equipment

  • Digital scale or measuring tools: useful for repeatable tea and sugar quantities.
  • Thermometer: helps you understand how temperature is affecting fermentation speed.
  • pH strips or a pH meter: useful for brewers who want to monitor acidity rather than relying only on taste. pH is one indicator, not a complete safety test.

Choosing a brewing jar

Glass is a practical choice for home kombucha because it is easy to clean, easy to inspect and suitable for acidic foods. Choose a vessel with enough headspace for the batch and a wide enough opening to make cleaning and culture handling straightforward.

For most home brewers, a roughly 2–4 litre vessel is a useful starting size, but the best size depends on how much you actually plan to brew and how often you want to bottle.

Do you need a spigot?

No. A spigot is convenient for continuous-brew systems but is not required for a standard batch. If you use one, make sure the assembly is food-safe, easy to clean and designed for acidic liquids. The most important factor is preventing residue and biofilm from accumulating in hard-to-clean parts.

Covering the vessel

During primary fermentation, the vessel is normally covered rather than sealed. The cover should keep insects and debris out while allowing the gas exchange appropriate to the fermentation method. Secure it firmly so fruit flies cannot enter around the edges.

Temperature monitoring

Temperature strongly affects fermentation speed. A thermometer is more useful than trying to judge the room by feel, especially during seasonal changes. If your environment is unusually cool, fermentation may take longer; in a hot Indian kitchen, the opposite can happen and the brew may acidify faster.

Measuring acidity

pH measurement can help you compare batches and identify unusually slow or fast acidification. If you use strips, follow the manufacturer's instructions and treat the reading as an approximation. Do not use a single pH number as a substitute for good hygiene, appropriate ingredients and sound fermentation practice.

Equipment for second fermentation

Secondary fermentation is optional. If you want carbonation, transfer the finished kombucha to clean, suitable bottles and leave appropriate headspace. Fermentation in a sealed container creates pressure, so use bottles designed for carbonated beverages and monitor the process carefully. Refrigeration slows fermentation once the desired carbonation is reached.

Cleaning and sanitation

Clean equipment matters more than buying specialised gear. Wash the vessel, utensils, bottles and any reusable components thoroughly between batches. Rinse away detergent residues. Where appropriate, use a food-safe brewing sanitiser according to its instructions.

Pay particular attention to spigots, bottle caps, gaskets and other components that can retain residue. If equipment cannot be cleaned properly, it is a poor choice for repeated fermentation.

A simple first-brew setup

  1. Clean and prepare the brewing vessel and equipment.
  2. Brew your tea and dissolve the sugar.
  3. Cool the sweetened tea before adding the live culture.
  4. Add the SCOBY and starter liquid according to your culture's instructions.
  5. Cover the vessel and place it somewhere stable and away from direct sunlight.
  6. Monitor time, temperature and taste as fermentation progresses.
  7. When the flavour is where you want it, bottle or refrigerate according to your brewing method.

What is optional?

You do not need a specialised fermentation chamber, expensive glassware or a large collection of tools to begin. A clean vessel, reliable culture, appropriate ingredients and basic monitoring are enough for a straightforward home setup.
