What changes kefir most?
- Temperature. Warm rooms generally accelerate fermentation; cool rooms slow it.
- Milk composition. Fat, protein, processing and homogenisation affect texture and separation.
- Inoculum. Grain mass, starter dose and culture history change the starting microbial population.
- Time. Longer fermentation usually means more acidity and more visible separation.
- Container hygiene. Residual soap or competing cultures can disrupt a ferment.
- Culture history. A newly activated culture may behave differently from one repeatedly propagated.
What does the science say?
Human research on kefir is promising but heterogeneous. A systematic review of randomized trials found signals of benefit in several areas but highlighted small samples and substantial risk of bias. Recent reviews similarly emphasize variation in kefir composition, dose, duration and populations. Zoh therefore uses evidence-aware language rather than presenting kefir as a treatment.
