Yogurt and Dahi Troubleshooting: Runny, Separated or Not Set?

Start by separating a texture problem from a failed fermentation. A little liquid on set yogurt can be normal. Milk that has not set as expected needs a different response; do not turn every unsuccessful batch into lassi.

These distinctions follow university extension guidance on yogurt preparation and troubleshooting. Appearance alone cannot establish safety.

Check the Zoh first-batch quantities

Both current Zoh yogurt products specify one complete 5 g sachet for 500 ml dairy milk and an incubation temperature of 37–42°C. Start checking after 6 hours, then at 2-hour intervals as instructed. Six hours is the first check, not a guaranteed finish time. If setting is delayed, contact us; do not keep the batch warm indefinitely.

Record these details before the next batch

  • Starter name, lot details and storage history
  • Milk type, brand and quantity in ml
  • Milk temperature in °C when the starter was added
  • Incubation temperature, start time and finish time
  • When the finished yogurt went into the refrigerator
  • A clear photo of the set and any separated liquid

This record makes a support conversation useful. “It did not work” gives much less information than the same message with temperatures and times.

Mumbai summer or Gurgaon winter?

Use the starter’s prescribed process rather than a city-based rule such as “leave it overnight.” Record conditions around the container. A location name is useful context for support; it is not a measurement of the milk temperature.

Use the instructions for your actual culture

Keep the Greek yogurt starter and Bulgarian yogurt starter instructions with their respective products. Do not borrow a dose or incubation schedule from an unrelated dahi recipe. More starter is not automatically the answer.

Do not extend a failed process indefinitely. Discard the unsuccessful batch and review the starter instructions.

Is straining required for Zoh Greek yogurt?

No. Follow its preparation instructions and refrigerate the finished yogurt. Draining successfully set dahi in the refrigerator is an optional technique for dishes that need a thicker base.

What can I make with a successful batch?

Use the yogurt recipe guide to choose a lassi, raita, dip or dessert. Recipe preparation does not make a spoiled or failed batch safe.
