Making natto at home is a controlled fermentation process, not a mystery. You need cooked soybeans, a defined natto starter culture, clean equipment and a way to keep the fermentation environment consistently warm.
This guide is designed for beginners in India and focuses on repeatability: measure your beans, control your temperature, keep your equipment clean and change one variable at a time.
What you need
- Dry soybeans
- Natto starter culture containing Bacillus subtilis var. natto
- Clean cooking and fermentation equipment
- A fermentation setup capable of maintaining roughly 40–43°C
- Clean containers that allow the culture to ferment the beans appropriately
Step 1: Soak the soybeans
Start with clean, dry soybeans and hydrate them thoroughly. The exact soaking time depends on bean size, water temperature and the beans themselves, so treat soaking as a preparation step rather than a fixed universal timer.
Step 2: Cook the soybeans thoroughly
The beans need to be sufficiently cooked before inoculation. Your goal is beans that are tender enough for the fermentation process while still holding their shape. Incomplete cooking can make fermentation less predictable.
Step 3: Inoculate with natto starter
Once the beans have been cooked, introduce the natto starter using a clean process. For the Zoh Probiotics starter, each 5g sachet is intended for up to approximately 500g of soybeans when the recommended process is followed.

Step 4: Ferment at a controlled temperature
A typical home process uses approximately 40–43°C for around 22–24 hours. Temperature stability matters: a setup that repeatedly swings outside the intended range can produce inconsistent results.
Do not treat 22–24 hours as a magic number. Fermentation is affected by the beans, starter, vessel, temperature stability and process hygiene.
Step 5: Check the fermentation
Successful natto develops the characteristic sticky, string-forming texture associated with the food. The beans should also have the expected fermented aroma and appearance for natto.
If a batch shows no expected fermentation characteristics or develops an unusual appearance or odour that concerns you, do not assume it is successful simply because the timer has finished.
Step 6: Chill the natto
After fermentation, refrigerate the batch. Chilling slows the fermentation process and gives the finished natto time to develop its characteristic eating texture and flavour.
Step 7: Eat and experiment
Traditional serving ideas include rice, spring onion, mustard and soy sauce. Beginners can start with familiar savoury foods and adjust the flavour to taste.
How much natto can you make?

Why does natto become sticky?
The sticky, stringy texture is one of the characteristic results of natto fermentation. It is not a sign that something has gone wrong by itself. In fact, the string-forming texture is one of the visual clues people commonly use when judging a successful batch.
Common reasons a batch goes wrong
- Fermentation temperature is too low or unstable.
- Equipment or hands introduce unwanted contamination.
- The fermentation vessel is poorly suited to the process.
- The beans were not cooked sufficiently.
- The fermentation environment does not provide the conditions the culture requires.
- Too many variables are changed between batches, making troubleshooting difficult.
The beginner rule: make one variable boring
Your first successful batch should be deliberately unexciting. Use one soybean type, one measured batch size, one fermentation temperature and one consistent process. Record what you did. Once you have a reliable baseline, experiment with one variable at a time.
Natto in India
India does not require a special version of the fermentation process. The main challenge for home makers is maintaining a reasonably consistent warm fermentation environment. Depending on season and location, ambient temperatures may or may not be suitable, so a controlled setup can make repeatability easier.
