How to Make Hung Dahi for Dips and Desserts

Hung dahi is finished dahi with some liquid drained away. Use it when a recipe needs a thick dip or dessert base. This is an optional kitchen technique: it is not an extra fermentation, and it is not a required step for preparing Zoh’s Greek yogurt.

What you need

  • 500 g plain, chilled dahi that has set successfully
  • A clean fine-mesh sieve and food-safe muslin
  • A deep bowl, a cover and space in the refrigerator

Method

  1. Line the sieve with clean muslin and set it over the bowl, leaving room below for liquid to collect.
  2. Add the dahi and cover. Put the whole setup in the refrigerator to drain; do not hang it over the kitchen sink.
  3. Check periodically over the next few hours. Stop when the dahi holds the thickness your recipe needs.
  4. Transfer to a clean covered container and keep refrigerated. Weigh the finished dahi before measuring it into a recipe.

Alternatives outside India

A plain thick Greek-style yogurt may already have the texture you need. Check it before straining. Avoid vanilla yogurt in savoury dishes. This method has not been validated here for plant-based yogurt; follow the chosen recipe’s substitution notes.

Do not copy the original yogurt’s per-100 g nutrition panel onto the strained result. The weight and composition have changed; exact values require a defined recipe and yield.
